When I want a nice bologna sandwich I love fixing these bologna club sandwiches. The thick cut Curtis brand bologna, cheese, bacon, and mayonnaise. It just hits right. Give it a try, I think you'll enjoy it.
Ingredients:
6 slices Bread, I used potato bread
4 slices American cheese
4 slices thick cut bologna, I use Curtis Brand thick cut
4 slices bacon
mayonnaise
4 Tomato slices
onions thinly sliced
Shredded lettuce
Directions:
1. Preheat griddle to low and put down bacon. Cook to your liking. When cooked take off griddle on some paper towels to drain.
2. In the bacon grease, put down bologna and the bread to toast both sides. After a minute or two, flip the bologna and cook the other side. Next check the bread for toasting. Flip and toast the other side of bread.
3. When bologna has the crust you want, add a piece of cheese to each piece of bologna and let melt. When bread is done, remove to a cutting board and get ready to assemble.
4. Put Dukes mayonnaise on each piece of bread. Put shredded lettuce on two pieces of bread followed by a piece of bologna with cheese. Next, add a few tomato slices and onion slice, not forgetting to season tomato with salt and pepper. Put another piece of bread on top of the tomato's and onions. Add more mayo on the piece of bread on top. Then put another piece of bologna followed by bacon. Top with third piece of bread. Enjoy.
