This Breakfast Cowboy Stir Fry is a winner and will be sure to feed you and your crowd and have leftovers! Inspired by CJ over on the Blackstone channel, this dish was so good and we've made it a few times again.
Ingredients:
1 large green pepper chopped
1 onion chopped
2 ears corn
2 cans diced potatoes, drained
Hussey's Heifer Dust
1 lb. smoked sausage
1 lbs. rib eye steak
1 can black beans, drained
1 tbsp Worcestershire sauce
3 tbsp pickled jalapeno's
4 large eggs
2 cups shredded cheese
4 green onions chopped
Salsa if desired
hot sauce if desired
Directions:
1. Preheat griddle to low. Add some clarified butter and add the corn on the cob. Add more clarified butter to the griddle and add the potatoes. Put down the pepper and onion down on the griddle in a different spot. Add some clarified butter to the veggies. Season everything with Heifer Dust.
2. Slice the sausage into medallions and add to the griddle. Check and flip potatoes and veggies. Move veggie's, potatoes and sausage to the side and turn the 2 middle zones of the griddle to high.
3. Season steak with ample amounts of Heifer Dust. Put some liquid gold down on the griddle and add the steaks. Cook for about 30-45 seconds and flip. Cook for another 45 seconds and remove from griddle and cool slightly.
4. Move corn to middle to continue cooking and add the black beans to the griddle. When corn is done to your liking, remove from griddle and remove the kernels from the cob. Return the corn to the griddle adding a little more clarified butter to the corn.
5. While corn is cooking, chop up the steak into bite sized pieces. Mix veggie's corn, black beans, sausage and potatoes together. Move to one side of the griddle. Get the center hot again and add more clarified butter and put steak back on the griddle. Add Worcestershire sauce to the steak and mix. Mix steak in with the potato veggie mixture. Add some more Worcestershire sauce to everything and add the jalapenos.
6. Cut the temp on one side of the griddle and add the eggs. salt and pepper to taste and fry to your liking. While eggs are cooking, add cheese to the steak mixture and mix.
7. Plate the steak mixture on a large platter and put eggs on top. Garnish with green onions, salsa and hot sauce.
