I'm a huge fan of chicken satay and have always wanted to try it out. I made this chicken satay recipe with peanut sauce on Blackstone griddle which made the process so much faster and easier. The family enjoyed this recipe too and in fact my daughter wanted to take it for lunch to school. Ingredients I used are below
Ingredients
2 pound Chicken breast, tenders, or thighs
1 /3 cup coconut milk (stir it well)
1 tsp tumeric
2 Tbs fish sauce
2 Tbs brown sugar
½ Juice of lime
2 - 3 cloves 2 tsp garlic paste or
2 tsp ginger paste
1 1/2 tsp garlic chilli sauce
1 tsp curry powder
Garnish:
Green onions
Cilantro
1 /2 cup Crushed peanuts
Peanut Sauce:
1 /2 cup creamy peanut butter
1 /4 cup of reserved marinade
1 Tbs low sodium soy sauce
1 Juice of one lime
1 - 2 teaspoon garlic paste or 1 2 cloves
1 tsp of ginger paste
1/4 cup hot water For desired thickness.
Directions
Step 1
1 Add marinade ingredients together and mix well. Cut chicken in 1" strips and add to 1/2 of the marinade. Let sit overnight in frig.
Step 2
2 Add ingredients of the peanut sauce together. Add hot water if needed to thin out.
Step 3
3 After marinating, put chicken on squers and put on griddle at around 350-370 degrees. Cook 2 minutes per side. When almost done, use reserved marinate to brush on chicken
Step 4
4 When done, put chicken on plate and drizzle with peanut sauce and all garnish items if you want.
