Description –I love some chicken souvlaki and some tzatziki sauce. This recipe is packed with flavor and creaminess! Usually these are on skewers and made with breast cut into pieces. I went more simple and went with tenders. I thought it turned out well.
Ingredients
Chicken Marinade
2 - 3 Juice of lemons
2 Tbs red wine vinegar
1 /2 cup olive oil
4 cloves garlic (mine were small to medium sized)
1 Tbs dried oregano
2 tsp kosher salt
1 /2 tsp ground black pepper
2 ½ lbs chicken tenders
1 1/2 tsp chicken powder
Tzatziki Sauce
½ teaspoon English cucumber (more or less if you want) grated and salted (about 1/2 salt)
1 clove garlic, grated (about 1 teaspoon)
1 cup greek yogurt (see note)
1 Tbs chopped fresh dill
3 tsp lemon juice
Directions
Step 1
1 Mix marinade ingredients and place over chicken. Marinade 1-4 hours.
Step 2
2 Mix Tzatziki items and let sit in fridge for 1-4 hours.
Step 3
3 Cook chicken until done.
Step 4
4 Serve with pita bread
