Clarified butter or as I like to say, Liquid Gold, is one of my most favorite types of cooking oil to use. Great for its high heat and buttery flavor. It simply cannot be beat!
Ingredients:
2 lbs. butter (unsalted)
Directions:
1. Preheat griddle to low. Put butter in a pot and put on griddle top. Let butter melt completely. You will notice that when it is melted, all the milk solids will come to the top. Turn off heat and let rest. The milk solids will drop to the bottom.
2. After it has rested, take a spoon and skim off the foam being careful not to skim any butter. If you can't get all of the foam, don't worry but get as much as possible.
3. Take a bottle, Blackstone's bottle works well, and ladle the liquid gold into the bottle being careful to not get any milk solids from the bottom of the pan in the bottle.
4. Use it in place of oil for a buttery taste on anything you cook.
