Collard Greens

Ingredients

3 bunches collard greens, chopped and rinsed

2 tbsp Bacon Up or butter

2 smoked ham hocks

1 medium onion chopped

1 tsp red pepper flakes (optional)

32 oz chicken broth without salt

2 tbsp chicken powder

32 oz water



Directions

Step 1

1. Remove the leaf from the stalk and rinse. Once rinsed, cut the vein out (optional but makes them more tender) of the collards. Roll the collards up in a big roll and rough chop them. Put a big pot on the stove and add some water and salt and bring to a boil. Add collards and stir. Simmer for one minute to par boil them. Drain, Put pot back on stove on medium heat.

Step 2

2. Add bacon up to the pot. Add chopped onion and add some salt and pepper. Let them sweat down. Score the ham hocks and add to pot along with red pepper flakes if using. Cook till ham hocks are warmed through and add collards.

Step 3

3. Add chicken broth, water and chicken powder and mix well. Let simmer for an hour checking every 30 minutes.
