Cottage Cheese, Sweet Potatoe Beef Bowl

Ingredients:
2 large, sweet potatoes Â
2 tbsp Hussey's Heifer Dust
2 tbsp Hussey's Fiesta Dust
1 lb. 80/20 ground beef
1 avocado cut into bite size pieces
3 tbsp Mike's hot honey
4 cups cottage cheese
Directions:

1. Put sweet potatoes in microwave and cook till just about done. Chop sweet potatoes up into bite size pieces. Preheat griddle to low or around 350-360 degrees.

2. Put some avocado oil down on the griddle and put down the sweet potatoes. Season potatoes with Fiesta Dust as well as Heifer Dust. Turn the left two burners up to high. Stir up potatoes and get a char on the potatoes. If they look dry, add more oil. When cooked to your liking taste and add salt if necessary.

3. While potatoes are finishing up cooking, add the ground beef to the hot side of the griddle. Flatten out beef to get a good contact patch. Flip ground beef and season with Heifer Dust and Fiesta Dust. As beef gets close to being done, start breaking up in chunks. Turn off burners and assemble

4. Take a plate or bowl and add sweet potatoes then add ground beef, cottage cheese and some avocado. Drizzle Mike's hot honey over the top. Finish up with a dusting of Fiesta Dust and enjoy
