I would put this sandwich up there in high ranks for sandwiches that we've made over the years. Now, I must say, it needs to be eaten fairly fresh, but don't worry, it's so good, you'll eat all of it!
Ingredients:
3 Chicken breasts -- boned and skinned
1 bag Doritos ( I use Cool Ranch but use your favorite)
Breading Stations:
2 large eggs
1/2 cup Buttermilk
2 tbsp Hussey Heifer Dust, divided
2 cups flour
peanut oil for frying
4 Potato Buns
8 slices cheddar cheese
sliced tomatoes
shredded lettuce
mayonnaise
sliced red onion
pickles
Direction:
1. Preheat griddle to low/med. Bring temp to 350-400 degrees.
2. Start by taking chicken and cut off the tenderloin and then cut chicken breast in half where it starts tapering off. Butterfly the thick piece of chicken making 3 pieces of chicken per breast.
3. Put pieces of chicken in a gallon ziplock and pound till flat and even thickness.
4. Take 1/2 bag of Doritos and put into another gallon ziplock. Crush the Doritos into manageable pieces for a coating.
5. Set up breading station. First add eggs, buttermilk and tbsp Heifer Dust. Second: Flour and tbsp Heifer Dust, and third: crushed Doritos.
6. Dredge chicken in the egg mixture then the flour mixture then back to egg mixture and finally in the crushed Doritos. When all the chicken is dredged, add some oil to the griddle and drop the chicken in the oil. Cook for 2-3 minutes. Flip when the chicken gets golden and add two slices cheddar cheese per chicken breast.
7. Put down the buns to toast. When toasted to your liking, add mayo then add lettuce and chicken breast. Top with tomato, onions and pickle. Season with salt and pepper.
This is fantastic. Will definitely do this again
