Easy Omelets on the Griddle

Updated: Jul 1

Ham and cheese omelet's is one of my favorite breakfast foods and using the Blackstone griddle is helpful but can be difficult. You'll see many tips cooking these omelet's and you'll be a pro!

Ingredients:

3 large eggs

Salt and black pepper to taste

2 tbsp onion chopped (can use frozen if you want)

2 tbsp red peppers, diced (can use frozen if you want)

1/4 cup Colby jack cheese, shredded

1/4 cup ham, diced

3 tbsp butter

1 tsp pickled jalapeno's Optional

Directions:

1. Preheat griddle to low or around 300 degrees.

2. Crack your eggs in a bowl and whisk together. Add some salt and pepper. Set aside. Put some oil on the griddle and add the peppers and onions. In a different spot, add diced ham and cook until done to your liking. Salt peppers and onions

3. Check the temp of the spot of your omelet and turn off burner if needed to reduce to 300 degrees. If needed add some water to reduce heat.

4. When ready to make an omelet, put butter down on the griddle and spread out the size of the omelets. Slowly pour eggs on griddle. Using your spatulas gradually make the eggs in a square on the griddle. When it starts to cook on the edges, add shredded cheese down the middle. Next add ham and veggies on top of the cheese. If using, add jalapenos to the top.

5. To fold, start on the top and fold down, then the bottom fold up and then fold each side. After a minute of cooking, flip being careful as it is delectate. Cook another minute on the other side. Church it up with some green onion and enjoy
