How to Cook Hibachi at Home with a Blackstone Griddle | Better Than Restaurants

When I got my very first Blackstone griddle back in 2015 I could not wait to cook hibachi (really teppanyaki, but in the US, seems most restaurants call it hibachi). It was literally all I could think about getting to. Many share this same desire and tell me all the time.


So that's why I created this ultimate tutorial on crushing hibatchi at home on your Blackstone griddle or any other kind of griddle for that matter. Hope you enjoy the video as well as the recipe below.

The true magic of any Hibachi meal lies in the irresistible Yum Yum sauce. Surprisingly, something so easy to make can impart a burst of flavor with just a few ingredients. The key to perfect Yum Yum sauce is preparing it at least a day or night in advance. There's one secret to making the best Yum Yum sauce! The blend of flavors will elevate your hibachi at home and your guests will think they're at a Japanese steakhouse!

Prep time: 24 hrs (because of the rice)

Cook time: 20 mins

Feeds 6-8


 

Ingredients:

For Yum Yum Sauce:

  • 1 cup Duke's mayonnaise

  • 1 tablespoon ketchup

  • 2 tablespoon sugar

  • 1 tablespoon paprika

  • 2 tablespoon heavy (whipping) cream

  • 1 tablespoon rice wine vinegar

  • 2 tablespoons melted butter (unsalted) - got this tip from Jason Farmer , thanks Jason!

Rice:

  • 2 cups jasmine rice

  • 2 tablespoon chicken powder

  • 2 cups water (roughly 1:1)


Griddle Butter :

  • 1 ½ sticks of softened butter

  • 2 tablespoon garlic paste

  • 1 tablespoon soy sauce

Hibachi:

  • 1 red peppers, diced

  • 1 yellow onion, peeled and chopped

  • 3 green onions, chopped (white part)

  • 1 zucchini, sliced lengthwise

  • 8oz mushrooms, sliced

  • 2 rib-eye steaks

  • 3 chicken breasts

  • 2 tablespoons soy sauce

  • A dash of white pepper

  • 2 large eggs

 

Let's get Started:


Cooking Rice:

  1. Before cooking, rinse the rice thoroughly to remove excess starch.

  2. To cook the rice, add an appropriate amount of water in a rice cooker and include some chicken powder for a flavorful boost.

  3. Take a tray or pan, and spray it with oil.

  4. Once the rice is cooked, spread it out on the tray and refrigerate overnight.


Preparing Vegetables:

  1. Vegetable preparation mainly involves dicing and cutting.

  2. Dice red pepper and yellow onions, chop green onion and slice mushrooms and zucchini.


Yum Yum Sauce:

  1. Combine griddle butter ingredients.

  2. Mix Yum Yum sauce and taste to adjust flavors as per your preference.

 

Cooking Vegetables:

  1. Pour some oil on a pre-heated griddle and place zucchini, onions, and mushrooms in three spots on the griddle.

  2. Let the veggies cook for three minutes, then flip everything and cook for an additional three minutes. After cooking, move all the veggies to a cutting board.


Preparing Chicken and Steak:

  1. Salt the chicken and steak, place them on the griddle, add pepper, and cook each side for about 2 minutes.

  2. When the chicken and steak are still undercooked, remove them from the griddle and set them on the cutting board.


Final Steps:

  1. In the final step, add more oil to the griddle and place the rice. While the rice is cooking on one side, put all the veggies on another spot and cook for a few minutes. Add salt to vegetables and mix with the rice.

  2. After mixing rice and vegetables, add soy sauce, a tablespoon of griddle butter, and white pepper. Move rice to one side, scramble the eggs on the griddle, and mix them with rice.

  3. Slice the undercooked steak and chicken into bite-sized pieces and add them back to the griddle separately. Place zucchini on another spot of the griddle.

  4. Add mushrooms and part of white onions to the steak and the rest of the onions to the chicken.

  5. Add a heaping tablespoon of griddle butter to the steak, chicken, and zucchini. You can also add soy sauce to the steak as per your preference.

  6. Cook all chicken, steak, and zucchini separately on the griddle. Now take a large plate and separately add rice, chicken, steak, and zucchini. Serve this mouthwatering Hibachi with irresistible Yum Yum sauce.
