Ingredients:
Sauce:
1/2 cup soy sauce
1/4 cup low sodium soy sauce
1/4 cup honey
1/4 tsp chicken powder
juice of 2 limes
Chicken:
6 boneless and skinless chicken breasts
2 tbsp Hussey's Heifer Dust
Spray oil
1 package Uncle Ben's Ready Rice Jasmine
Directions:
1. Preheat griddle to low. Add some oil.
2. Lightly spray chicken with cooking spray and season with Heifer dust and set aside. Mix sauce ingredients in a small bowl. Mix well. Taste and adjust to your taste.
3. Add jasmine rice to the griddle. Add some water to rice and put a dome over to steam. Add some oil to other side of griddle and add chicken. Check rice and mix up, then put cover back on.
4. Let chicken go about 3 minutes and flip. Once flipped, add sauce liberally to chicken. Remove dome from rice and mix well. When sauce is liberally applied, keep flipping to coat both sides. Cook chicken to 160 and let rest till it reaches 165 degrees. As sauce reduces, add more and keep flipping.
5. Once chicken is up to internal temp, remove chicken and rice to a serving platter. Take some of the sauce from chicken and put over the chicken on the platter. Slice the chicken and enjoy.
