Mahi Mahi & Peach salsa over jasmine/Cilantro Rice

In the summer, I love seafood. Mahi Mahi was on board today and it was phenomenal.



Ingredients

1 pound Mahi Mahi

Fish Seasoning:

1 tsp brown sugar

1 /2 tsp garlic powder

1 /2 tsp onion powder

1 /2 tsp salt

1 /2 tsp pepper

3 /4 tsp cumin

1 /2 tsp chilli powder

Peach Salsa:

1 2 peaches

1 /2 jalapeno

1 /4 cup red onion

1 /4 cup red pepper

1 /4 cup chopped cilantro (more or less depending on your taste)

1 /2 lime

3 tbsp honey

Drizzle olive oil

Cilantro Lime Rice:

2 cups Jasmine Rice

2 cups water or chicken stock

1 /4 cup chopped cilantro

Zest of lime

Butter

Salt to taste



Directions

Step 1

1 Heat griddle to 400 degrees. Put olive oil on fish and add seasoning. Put some oil down on griddle and put flesh side down to start. Cook fish 2-3 minutes per side or until done.

Step 2

2 Salsa:

Step 3

3 Chop up all ingredients. add oil and honey salt & pepper and combine.

Step 4

4 Cilantro Lime Rice:

Step 5

5 - Melt butter and add rice to toast.

Step 6

6 - After 2-3 mins, add water/stock. Bring to a boil. Cut to low simmer for 15 mins.

Step 7

7 - After 15 mins, add cilantro, lime zest, and juice of lime. I also add some more butter and some salt.

Step 8

8 - Taste for flavor and enjoy
