Mashed Tater Cakes

Ingredients:

2 cups mashed potatoes

2 large eggs

1/4 cup flour

1 tbsp chives

1/2 cup Monterey Jack cheese shredded

2 slices bacon

Salt and black pepper to taste

Sour cream for serving



Directions: 

1. Cook and chop bacon.Save grease from bacon on the griddle. Put mashed potatoes in a large bowl. Add eggs and mix. Add flour, chives, bacon and cheese and mix. Season with salt and pepper

 

2. Using a spoon, drop heaping tablespoons of taters onto the griddle. Cook 2-3 minutes and flip and cook 2-3 minutes on the other side. When both sides are golden remove to a plate. Garnish with green onion and some chopped bacon. Serve with sour cream.
