Ingredients:
1 pound Wagu chopped beef (can use 80/20 if desired)
2 onions sliced
2 tbsp Bacon Up
1 tsp salt
1 tbsp Worcestershire sauce
1 tsp balsamic vinegar
1 tbsp Hussey's Heifer Dust
1 cup brown sugar
2-3 Brioche hamburger buns
3 tbsp mayonnaise
4-6 slices American cheese
Directions:
1. Preheat griddle to low or around 400 degrees. Peel and slice onions. Put Bacon Up down on the griddle and add the onions. Mix onions in the bacon up and add some salt.
2. While onions are cooking, make 4-6 burger balls and set aside. Stir onions and add Worcestershire sauce, balsamic vinegar and Heifer Dust. Mix well and let cook till reduced and caramelized. Move to one side of the griddle to keep warm.
3. Turn the other three burners up to high. Take each burger ball and roll it in the brown sugar. Once all the balls are coated get the buns ready by adding mayo to both sides of each bun. When everything is ready, put the burger balls down on the hot griddle. Put some parchment paper over the balls and smash down, counting to 10 before going to the next ball. Once smashed, put buns down to toast.
4. Season burgers with Heifer Dust. When you see the burger crusting over, flip. Remove the buns from the griddle. Add some onions to each burger then add a slice of cheese to each burger. Turn off burners and put a burger on top of another burger to make a double patty. Add more mayo to the buns. Take the double burgers and put them on a toasted bun. Put top bun on burger and enjoy.
