Cooking breakfast on the Blackstone is the best as you can cook so many items in one place. This breakfast burrito had everything but the kitchen sink! Enjoy this awesome breakfast cook and hope you try it out.
Ingredients
3 sausage patties
1 shallots, coarsly chopped
½ red peppers, diced
Salt & Pepper
1 cup tater tots
1 tbsp Lowery seasoned salt
4 large eggs
2 tbsp heavy (whipping) cream
2 tbsp butter
1 xlarge Flour tortillas
2 oz Shredded pepper jack cheese
2 oz shredded Colby cheese
2 oz shredded mozzarella cheese
2 tbsp Pico
2 tbsp sour cream
2 tsp avocados, seeded, peeled and mashed
2 tsp Old El Paso Salsa Verde
Directions
Step 1
1. Preheat griddle to low or 300-350 degrees and put sausage patties on the griddle. Add some oil to griddle and add shallot and red pepper. Salt and pepper veggie's and sweat. Meanwhile add tater tots to air fryer and cook till done. ( if you don't have an air fryer, cook in oil on griddle top)

2. Flip sausage and chop up on the griddle. Mix sausage with veggie's. Put tater tots on the griddle to keep warm and add some seasoning. Add some butter to the sausage mix

3. Lower temp to 250 by turning off two burners and add some water. Mix eggs and heavy cream together. Spread sausage mixture out and add eggs to the mix. Cook eggs mixing the eggs and sausage mix. When cooked, add cheese to top of sausage mixture saving some for the top. Mix until melty. Take some butter and put down and add flour tortilla. Heat up and flip. Add a small amount of water under tortilla when flipping. This will make the tortilla very plyable.
Step 4
4. To build, take tortilla and add a healthy amount of sausage mixture then add some more cheese. Put some tater tots on top of the cheese. Add some pico, sour cream with lime and avocado and salsa Verde. Roll up into a burrito and try to eat the whole thing.
