I watched a Tastemade / Tasty video where they made an omelette grilled cheese where they removed the middle of some bread then laid it in a pan and poured the mix in the hole then made the grilled cheese from those two pieces. I made this on the Blackstone griddle, but you can do this anywhere really.
Ingredients
4 slices Sourdough bread
4 large eggs
1/4 cup half and half
1 /2 cup spinach
4 slices American cheese (or whatever you want)
1 /3 cup shredded cheese I used cheddar jack
1 /4 cup red pepper
4 slices bacon
2 green onions
2 pieces of deli ham
Directions
Step 1
1 Put bacon on griddle at 320-350 degrees and cook to your liking
Step 2
2 Add eggs, half and half to a bowl. Chop up green onions, spinach, red peppers, chopped bacon and ham, and shredded cheese and add to the egg mixture.
Step 3
3 Take your bread and cut out the center of the bread. put the slices of bread on a well buttered griddle and fill the holes with the egg mixture.
Step 4
4 Cook for 2-3 minutes and add more butter and flip. Once flipped, add two slices of cheese to two of the bread. after two minutes, add the non cheese slice to the cheese slice and let cook another two minutes to melt the cheese. Remove, slice and enjoy
