Orange Chicken with Hungry Daughter

Ingredients

3 Chicken breasts boneless/Skinless

⅓ cup cornstarch

⅓ cup flour

2 tsp Hussey Heifer Dust

3 large eggs

2 tbsp milk or water

1 - 2 cups rice, cooked

Orange Chicken Sauce:

1 cup orange juice

½ cup sugar

2 tbsp rice vinegar or white vinegar

2 tbsp soy sauce

¼ tsp ginger

¼ tsp garlic clove, minced

½ tsp red chili flakes

1 zest of one orange ( add juice of the orange into the sauce mixture)

1 tbsp cornstarch

2 tsp chicken powder



Directions

Step 1

1. Preheat griddle to high and add oil to a pan to fry chicken.

Step 2

2. Cut chicken in bite size pieces. Mix all ingredients for sauce together in a bowl and set aside.

Step 3

3. Set up dredging station using three shallow pans. The first put cornstarch, flour and Heifer dust and mix. Second put eggs and water or milk. The third is for coated chicken before it gets shallow fried.

Step 4

4. Take chicken in batches and drop in egg mixture then flour and add to third dish. Once done, drop chicken in pan with oil and shallow fry at 350-375 degrees for about 3-4 minutes stirring every minute or so. When done add to a pan also on griddle to keep warm while doing the rest of the chicken.

Step 5

5. When all chicken is done, pour sauce over chicken starting with half and mix into chicken. As it starts to thicken, add more sauce as needed. Pour finished over rice and garnish with green onions if desired.
