Peach cobbler is a southern staple and what better way to transform this into a griddle recipe! Peach cobbler cakes is what this is and you'll love the way it tastes, especially with a drizzle of honey and a scope of ice cream at the end.
Ingredients
Peaches
4 cups sliced peaches
1 cup sugar
1 /2 cup water
Batter
1 ½ cups self rising flour
1 cup sugar
1 ½ cups milk (whole milk)
1 tsp ground cinnamon
Honey for drizzle
Ice cream on the side
1 stick of butter
Directions
Step 1
1 Slice peaches and add sugar and water in a small pot on the Blackstone. Heat and stir until warmed through and is syrupy. Keep warm.
Step 2
2 In a bowl, mix flour, sugar, milk and cinnamon together until smooth. Add flour or milk to get a pancake like consistency. In the meantime take a small pan and melt 1/2 stick of butter.
Step 3
3 Get griddle to 350 degrees and melt butter. Add small ladles of cake mix to the butter to make six pancake size cakes. Add peaches to each cake and then add some more cake batter to the top of the peaches. Drizzle with butter and cook until browned on one side. Flip, and drizzle with more butter and brown the second side.
Step 4
4 Remove from griddle and serve with ice cream and a drizzle of honey if desired.
