Red Curry Chicken Tacos

These red curry chicken tacos on the Blackstone griddle were a flavor explosion! They were super easy and a really good bite. I may have ate 5 of these after trying them :).



Ingredients

1 lb chicken thighs (pounded for more uniform)

1 Tbs cornstarch

1 Tbs soy sauce

3 Tbs Thai Red Curry paste

1 /4 cup lime juice

1 /4 cup coconut milk

3 cloves garlic

1 thumb ginger

Pico:

1 /2 cup diced tomatoes

2 tbs jalapeno, stemmed, seeded and finely diced

1 /4 cup onion

1 /4 cup cilantro, or to taste

squirt of oil

¼ Salt and pepper to taste

Tortillas of choice

Creama

1 /2 cup sour cream

1 Juice of lime

squirt of Sriracha

Limes and cilantro as garnish



Directions

Step 1

1 Cut chicken up into small pieces and put in a bowl. Mix Pico ingredients in another bowl and let stand. Mix crema ingredients in a small bowl and let stand.

Step 2

2 To the chicken, add cornstarch and soy sauce. Put on a hot griddle and cook. When almost done, turn heat down to medium. Add salt and pepper.

Step 3

3 Add garlic, ginger and red curry paste and stir. Add coconut milk and cook for 2-3 minutes to thicken. Add Lime juice.

Step 4

4 Warm tortilla, flour or corn. Flip and build your tacos. put chicken down then pico, then crema and garnish with cilantro
