Spicy Chicken Biscuits

Making homemade biscuits and breading up some chicken breast and frying them on the Blackstone griddle is always a good thing, but adding some delicious honey to the mix also is just a crime, a good one though. Hope you enjoy this one!



Ingredients:

Biscuits:

2 cups self-rising flour (and a little more for dusting)

1/4 cup shortening

3/4 cup buttermilk

Chicken:

2 cups House of Autry Spicy Chicken Breading

2 cups Buttermilk

4 Chicken breasts -- boned and skinned

Mike's hot honey




Directions:

 

1. In a bowl add flour and shortening and mix well with your hands. Once mixed, make a well in the flour and add buttermilk. Mix with fork until sticky. You don't want it wet nor dry. Should be a bit sticky. Add some flour to your workspace. Knead just a bit, don't overwork it. Then take a rolling pin and roll out to 3/4 thick. Take a large biscuit cutter and cut biscuits. Roll leftover dough out again and cut more biscuits.

 

2. Preheat griddle to low or 300-350 degrees. Put some oil on griddle and add biscuits. Cover with dome and let ride for 2-3 minutes and then check. When golden brown, flip and cook on other side. Let ride till the other side is golden brown, about 3-5 minutes. When biscuits are done, rub some butter on the top. Flip and add butter to the other side. Remove from griddle to a towl and cover with the towl to keep warm.

 

3. While biscuits are cooking, take chicken and put in a gallon ziplock and pound them out to a equal thickness. Add chicken to a bowl and add buttermilk to cover chicken. Mix the buttermilk to make sure all the chicken is coated.

 

4. Take a shallow pan and add the seasoned breading mix. Turn up the griddle on the chicken side to medium and add liberal amounts of oil. Take chicken from buttermilk and dip each piece into breading. Coat well. Add chicken and shallow fry.  Flip chicken and cook on other side till internal temp reaches 165 degrees. Remove chicken to your cutting board and slice biscuit.

 

5. Add a piece of chicken to the bottom of biscuit and drizzle some hot honey. Add the top and enjoy.
