Nothing like have fresh squash and zucchini right out of the garden for a great squash and zucchini casserole! This low carb / keto gratin is like a casserole, but just a weird saying. This dish is easy to make, and everyone will love it!
Ingredients:
1-2 Yellow Squash thinly sliced
1-2 zucchini thinly sliced
1/2 Chopped onions (however much you want)
1/2 block cream cheese
1/4 cup parmesan cheese
3/4 cup heavy whipping cream
2 Tbs butter
1/4 tsp garlic powder
1/4 tsp onion powder
dash Salt and pepper to taste
Directions:
1. Preheat oven to 375 degrees.
2. Start by slicing the squash and zucchini. Dice up the onion. Take cast iron pan and spray with Pam or rub with bacon grease.
3. Take slices of both zucchini and squash and lay into pan stacking them intermittently (one slice of squash then one slice of zucchini). Top with chopped onions.
4. Take a pan and add 2 tablespoons of butter and add the heavy whipping cream. Add the garlic and onion powder and salt and pepper. Add some salt on veggie's. Put on low heat on stove and add parmesan and cream cheese. Heat and stir for about 10 minutes to melt down on the stove. If you mix and it's loose, add more parm.
5. When all melted, add sauce to the veggie's . Level the sauce over the veggie's. Put in oven for 45 minutes.
