Ingredients
1 turkey tenderloin
1 cup celery chopped
1 cup onion chopped
1 box stuffing mix
4 cups chicken broth
2 stick butter, divided
16 oz frozen corn
2 lbs mashed potatoes
1 can cranberry sauce
Directions
Step 1
1 Preheat griddle to low. While it is heating, chop onion and celery and set aside. Cube up turkey into small cubes making sure to cut off the silver skin.
Step 2
2 Add 1/2 stick of butter to one side of griddle and add celery and onion. Cook till translucent or cooked to your liking.
Step 3
3 Once cooked, add whole bag or box of stuffing mix. Mix in butter and add 2 cups of chicken broth. Mix well. If dry add more chicken broth. Add more butter to other side of griddle and but stuffing on top of the butter. Let it ride and flip every once in a while.
Step 4
4 Add more butter mixed with some oil and put turkey down. Mix well and cook through. Season with your favorite rub. When turkey is done, add some butter and mix until melted.When done remove and set aside. Meanwhile move the stuffing in the spot where the turkey was and add some chicken stock to deglaze.
Step 5
5 While that is finishing up, heat up the corn and mashed potatoes.
Step 6
6 In a small pan add two tablespoons of butter and two tablespoons of flour and make a roux. Add chicken stock and whisk to remove all the lumps. If too thick add water and chicken powder.
Step 7
7 To build, add some stuffing to the bottom of a bowl, followed by mashed potatoes, turkey, gravy, corn and cranberry sauce on top
