The Big Dipper is my single most favorite sandwich to get over at JJs Side Street Deli in Thomasville, NC and sometimes, I try and make one myself!
Ingredients:
Au Jus:
1 1/2 cups unsalted beef broth
1 packet au jus gravy
1 tbsp Worchestershire sauce
1 tbsp beef powder
Creamy Horseradish sauce
2 tbsp Dukes mayonnaise
1 tbsp horseradish
1 tsp Worcestershire sauce
Big Dipper:
4 Martin's potato sub roll
1 1/2 lbs deli roast beef
Hussey's Heifer Dust
12 slices Provolone cheese
8 slices Swiss cheese
Directions:
1. Preheat griddle to low. Add an aluminum pan to griddle and add the au jus ingredients. Mix well and taste. Adjust as necessary. Set aside to heat up.
2. Mix horseradish sauce ingredients together in a small bowl and mix. Taste and adjust. Set aside
3. Put down some oil and add about 1/3 lb of roast beef, per sandwich, in piles the size of the bun to the griddle. Season with Heifer Dust. Pour some au jus over the roast beef. When heated on one side, flip over and add 3 slices of provolone cheese and 2 slices of Swiss cheese to each pile of roast beef.
4. Put mayonnaise on each bun and put on griddle cut side down to toast. Once toasted to your liking, put bun over the roast beef and using your spatula, flip over and remove to the cutting board.
5. Take the au jus and put in a small bowl. Add horseradish sauce to each sandwich, cut in half and dip in au jus. Enjoy
Tip: Can add green bell peppers and onion if desired.
I have a very picky kid when it comes to trying new things. Made this one night and he has requested it several times now. Our entire family loves it!!!
