Totchos

Totchos in my opinion are better than nachos and adding some pulled pork and glorious sauce on them, makes these WAY more over the top



Ingredients:

1 bag (32oz) tater crowns or tater tots

12 oz Mexican Blend shredded cheese

1/2 lb pulled pork

1/2 onion, diced

1 can (4oz) diced fire roasted green chilis

Hussey's Heifer Dust

2 tbsp Dukes Georgia Sweet Heat BBQ sauce

pickled jalapenos

Green Onions (scallions), sliced

Sauce:

1/2 cup sour cream

3 tbsp Dukes Georgia Sweet Heat BBQ sauce

1 tbsp apple cider vinegar

1 tsp Juice from pickled jalapeno jar.

1 tsp Hussey's Heifer Dust




Directions:

 

1. Preheat griddle to med/low or about 350 degrees. Add generous amount of oil and put the crowns or tots in the oil. Spread them out to a single layer and let them ride. Season with Heifer Dust

 

2. While the tots are cooking make your sauce and taste. Adjust to your liking.

 

3. Dice the onion and add to the griddle with a little oil and cook. Add some Heifer Dust to the onions. Add diced chili in a separate spot also in a little oil. Heat the chilis through. Check your tots and flip when one side is crispy and cook on the other side till crispy about 5-7 minutes per side. When done, move to one side of the griddle.

 

4. Add the cooked pulled pork to the griddle and heat through. Since it is already cooked, it only take a few minutes. If needed break apart into small pieces. Add some BBQ sauce to the pulled pork.

 

5. When heated up, mix the onions and chilis together and slide the pulled pork to one side of the griddle. Spread out the tater crowns and top with the onion mixture followed by 1/2 to 3/4 of the cheese, then add the pulled pork and the rest of the cheese. Put dome over everything with a little water to melt the cheese,

 

6. When the cheese is melted, remove to a platter and top with sauce, green onions and jalapeno. Enjoy

This was a great appetizer and much better than a baked tater tot casserole. I don't know the origin, but I heard someone say, "when I'm eating a shared totchos plate, I'm always thinking 3 totcho moves ahead of my opponent"
