Vegetables

  • •2 zucchini
  • •1 yellow onion
  • •8 oz mushrooms (225 g)
  • •1 Tbsp oil (15 ml)

Griddle Butter

  • •1 cup butter (226 g), softened

Yum Yum Sauce

  • •1/2 tsp garlic powder (2 g)
  • •1/2 tsp onion powder (2 g)
  • •Pinch of salt
  • •2 Tbsp heavy cream (30 ml)

Instructions

  1. 1Cook rice with water, chicken powder, and oil. Rest 15 minutes, then spread out and chill for at least 1 hour.
  2. 2Prep all ingredients: slice zucchini, dice onion, slice mushrooms. Make the griddle butter and yum yum sauce.
  3. 3Cook vegetables on low heat with oil until caramelized. Do not salt. Remove and set aside.
  4. 4Increase heat to high. Cook steak and chicken whole for the best sear. Flip and cook to proper temperature. Rest 5 minutes.
  5. 5Add oil and cold rice to the griddle. Break apart. Add vegetables, eggs, soy sauce, and griddle butter. Stir-fry.
  6. 6Chop steak and chicken. Return to griddle with butter, onions, mushrooms, and soy sauce. Toss together.
  7. 7Plate rice, vegetables, and proteins. Drizzle with yum yum sauce and serve.

  • ▸Cold rice is essential for good fried rice — make it ahead.
  • ▸Cook proteins whole for the best sear, then chop.
  • ▸Don't salt the vegetables — the griddle butter and soy sauce bring the salt.
