If you love tachos and you love bologna, you are going to love these Bologna Tachos. So many flavors blend together to create a cohesive taste — crispy tater tots, smoked bologna, peppers, onions, cheese, and ranch.
Bologna Tachos
- •1 package (16 oz) thick cut bologna
- •Hussey's Butt Dust
- •1 bag tater tots
- •1/2 medium onion, chopped
- •1 medium red bell pepper, seeded and diced
- •8 oz freshly grated cheese
- •2 green onions, chopped
- •Pickled jalapeños
- •Pickled red onions
Ranch Dressing
- •1 cup buttermilk
- •1 packet dry ranch dressing mix
- •1 cup mayonnaise
Instructions
- 1Preheat the griddle to low. Remove the binder from the bologna and season with Hussey's Butt Dust. Place on a cold pellet grill and turn it on to 300°F. Let it heat up and smoke while you prepare the other ingredients.
- 2In a bowl or squeeze bottle, mix the ranch dressing ingredients. Shake or stir well and set aside.
- 3Add plenty of oil to the griddle. Drop the tater tots into the hot oil and cook until crispy, turning occasionally. While the tots cook, chop the onion and pepper. Add them to the griddle to soften. Once softened, move to the side. Keep an eye on the tots and continue cooking until crispy.
- 4Remove the bologna from the smoker. Stack the slices and cut into cubes. Place the bologna on the griddle to crisp it up a bit, then remove from the heat.
- 5Arrange the tots in the center of the griddle, overlapping slightly. Spread the onions and peppers over the tots. Add one-third of the bologna on top. Generously sprinkle cheese over the bologna and mix well. Add more cheese on top and transfer to a serving platter. Finish with the remaining cheese and more smoked bologna.
- 6Garnish with green onions, ranch dressing, pickled jalapeños, and pickled red onions.
Hussey's Egg-Griddle Tips
- ▸Smoking the bologna first adds incredible depth — but you can also just griddle it.
- ▸Customize with your favorite toppings — avocado, salsa, or hot sauce all work.
